  • 1 large sized onion (chop)

  • 1 tbs cornstarch

Everything except the cornstarch and water will go into your 5 quart crockpot.  You will mix the cornstarch and water then stir it into the stew.  This will take between 8 and 10 hours to cook, so prepare ahead of time.  It requires very little attention and is one of the popular tasty atkins dinner recipes that the whole family will love.

One of the quickest and easiest atkins recipes includes kielbasa and beans.

Kielbasa and Bean Soup:

  • 2 cups water
  • 1/2 chopped celery
  • 2 carrots (peel and slice)
  • 1 medium potato (peel and dice)
  • 1 can of bean and bacon soup (do not dilute)
  • 8 ounces of kielbasa (thin sliced)

Bring veggies and water to a boil and simmer until tender.  Add the bean and bacon soup and kielbasa and heat it thoroughly.  It shouldn’t take more than 20-30 minutes from prep to ready to eat.  Store leftovers in the fridge for reheating.  It’s even better the next day.
